Chicken Pumpkin Coconut Curry
Good evening blogging world. I know I keep promising to post blogs at least once a week but, I’m getting better more like once a month now. You should be so proud of my progress with everything in our life. I’m pretty sure I have given you a little update on our life and that we purchased a home in Oklahoma and are finally putting down roots. But don’t worry to my followers who have enjoyed us being “Free and on The Road” we aren’t going to stop our travels. We still have a lot of exploring to do and with our homeschooling, we plan to take a lot of road trips for History and Social studies.
For now, we are just living life getting our house renovations underway and getting settled into our new state. We have had so much happen in our life in the last few months its hard to even put into words or know where to start. If you are on Instagram you can follow my daily updates at Free and On the Road. I love that I can post there easily daily but, I don’t like that I can’t tell you everything that’s going on because they limit how many characters I can type. I have expanded my horizons to share about my weightloss journey, my recipes, our homeschooling journey, our DIY home renovations, hopefully restuarnt reviews, and coffee shops! With that being said I wanted to share with you a easy crock pot recipe I threw together today. I wasn’t feeling the best this morning so knew it was a crockpot day. That way when the day was through I could just enjoy an nice hot meal. I’m so happy I did the work this morning because it paid off. Dinner was amazing! All the kids at it even John! You know its a hit when even the littlest eats moms special made meals.
You ask what inspired todays recipe? Well, I got some vegetables this last weekend at the local farmers market and wante to get the rest of them used up. I knew i had some pumpkin looking things, onions, carrots, peppers, water spinich, and lemon basil. I knew it needed protien so thought…chicken thighs and some coconut milk. I pretty much cut all the hard vegetables up and threw them in the bottom of the pot, put the frozen chicken thighs on top, dumped the coconut milk, added a little salt put on low and walked away. I knew i wanted seasoning and with moving i couldnt find any of my curry flavors so had my son grab some curry powder.
I’ve been making sure i do 10k steps everyday no matter how bad i feel so once Noah was home with my seasoning I added the curry powder, all the leafy vegetables and cornstarch. Mixed it all up and went for a walk. Rice was optional for this dish but, I knew i hadn’t eaten enough today so decided it would be a perfect compliment to the dish. Made a pot of rice and 20 mins later we had dinner served. After calculating the calories I think I would have added more chicken to up my protien in this dish but other then that it was perfect. Chicken Pumpkin Coconut Curry
Equipment
- 1 slow cooker
Ingredients
- 2 lbs Boneless Skinless Chicken Thighs
- 2 cups Green Kabocha any winter squash is fine
- 1 cup Chopped Onions
- 1/2 cup Mixed Peppers I used banana peppers
- 1/2 cup Carrots
- 2 Cans Unsweetened Coconut Milk
- 4 Cups Water Spinach
- 10 leaves Lemon Basil I could have added more
- 2 tbsp Cornstarch mix with equal parts of water before adding to avoid clumping
- 2 tsp Salt add to taste
Instructions
- Peel winter squash, remove seeds and cut in 1 in cubes
- Peel carrots and onions and cut in to bite size pieces
- Slice peppers, place all the above ingredients in the crockpot
- Add chicken thighs (I used frozen) pour both cans of coconut milk and top with salt, add the lid, and set to low.
- An hour before serving add the spinach, fresh basil, and cornstarch slurry. (this is optional, I just like it thickened up a bit.)
- You can start making rice at this point and it will all be ready at the same time. Enjoy this amazing soul-comforting harvest curry!
